Boiled chicken breast, most often, tastes rather dry. It’s a sin to hide, white chicken meat rarely turns out to be juicy, especially if it is boiled. I’ll give you some tips based on personal experience that will help you prepare tasty and wholesome food, while not getting better.
To make the salad delicious, you need to add to the boiled chicken some healthy fats that are found in avocados and high-quality olive oil. And juicy vegetables - spinach and cucumber, will bring their own special note and freshness. For sweetness, a passivated carrot is suitable, and a green onion will add sharpness to the dish.
Vinegar is not suitable for dressing diet salads; it must be replaced with freshly squeezed lemon juice. Instead of ordinary table salt, take a large sea salt, a few grains are enough.
And last, cook a small portion just before lunch or dinner, do not cook such snacks for future use in large quantities, only spoil the food.

- 120 g boiled fillet;
- 1 2 avocado;
- 1 carrot;
- 1 fresh cucumber;
- a handful of fresh spinach;
- a few feathers of green onions;
- Extra virgin olive oil
- 1 2 lemons;
- sea salt, black pepper to taste.
The method of preparing chicken salad with avocado and cucumber
Put spinach leaves in cold water, then rinse with running water to wash away the sand. Dry the leaves on paper towels or in a dryer for greens. Cut the spinach into strips, put in a salad bowl.
Three fresh carrots on a large vegetable grater. Sprinkle a frying pan with a non-stick coating with a drop of olive oil, drop the carrots into a preheated pan, and pass for several minutes. Cool the carrots and add to the salad bowl.
Ripe avocado cut in half, remove the stone. We clean the half of the avocado from the peel, cut into thin strips, immediately pour with lemon juice so that the slices do not oxidize in the air. Add avocado to the salad bowl.
Cut into large slices boiled chicken fillet (without skin!), Add to the remaining ingredients of the chicken salad with avocado and cucumber.
We chop the fresh cucumber in thin strips, if the peel is bitter, then cut it off so as not to spoil the taste of the dish.
Finely chop a few feathers of green onions, throw in a salad bowl.
